Southwest Sunrise Smoothie

Inspired by "Sunrise Smoothie" on Blue Zones

Ingredients

For mango-pineapple layer:

  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 cup frozen pineapple
  • 1/2 cup frozen mango
  • 1/4 cup coconut yogurt

For strawberry-banana layer:

  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 cup frozen strawberries
  • 1 frozen large banana
  • 1/4 cup coconut yogurt
  • shredded coconut, for garnish (optional)

Directions

1. Blend ingredients for one of the two layers above.

2. Pour into 2 glasses and store in the freezer while...

3. Blend the other layer (in a clean blender, of course)

4. Pour the second layer on top of the first and sprinkle coconut.

Note: Sub almond yogurt or soy yogurt for the coconut yogurt, if desired.

Serves 2.
